Description: Someone who assisted the butcher in his job, carrying out heavier duties such as the lifting and shifting of carcasses. A butcher prepared meats into specific cuts and sells to the public. Primary butchers consisted of selecting carcasses, sides, or quarters from which primal cuts could be produced with the minimum of wastage, separating the primal cuts from the carcasses, trimming primal cuts and prepare for secondary butchery or sale, and store cut meats.
